
It is the beginning of the New Year! It is winter outside, but you want it to be a comfort for two inside. Warm his heart with a nice soup for the two of you. The forecast for next week will be very cold, so what is better than a hearty vegetable soup!
The ingredients you will need:
2 tablespoons olive oil or unsalted butter
1 large yellow onion, coarsely chopped
1 cup baking potato, coarsely chopped
1 cup carrots, coarsely chopped
1 cup broccoli, coarsely chopped
3 cups chicken, meat or vegetable stock
1 teaspoon dried oregano
1 teaspoon dried thyme
1 bay leaf
Salt and freshly ground pepper, to taste
How to Make:
Warm the oil or butter over medium heat in a large saucepan.
Add the onion and sauté to soften (about 3 – 5 minutes).
Add all the vegetables, stock and herbs and bring to a boil.
Reduce the heat and simmer until the vegetables are tender (about 15 – 20 minutes).
Discard the bay leaf and season to taste with salt and pepper.
You may keep the vegetables chunky for extra body or puree half or all for a thick puree.
Great with some fresh baguette or French bread. You can make this soup with any fresh vegetables, but be sure to always include potatoes and carrots.
